Finnish Salmon Soup

A creamy, comforting Finnish Salmon Soup that brings instant warmth to cold winter days. This bowl feels like a slow, quiet evening at home — soft vegetables, tender salmon, fresh dill, and the kind of cosy flavour that makes winter cooking feel effortless.

It’s rich, nourishing, and so soothing that many families in Finland call it their “winter essential.” Perfect for a quiet weekend lunch or an easy weeknight dinner.

Ingredients

  • 500 g salmon, cut into large cubes

  • 400 g firm potatoes, diced

  • 3 leeks, thinly sliced

  • 3 carrots, sliced

  • 1.2 L fish broth

  • 200 ml heavy cream

  • Fresh dill, chopped

  • 1 lemon, sliced

  • Salt & black pepper

  • Olive oil for sautéing

How to make it

1. Prep the ingredients

Slice the leeks and rinse well. Cut the carrots and potatoes. Chop the dill and cut the salmon into large, tender cubes.

2. Build the base

Warm a little olive oil in a large pot. Add the leeks and carrots, season with salt and pepper, and cook until they soften and smell sweet and aromatic.

3. Add potatoes & broth

Pour in the fish broth and add the potatoes. Simmer for about 15 minutes, until the potatoes become soft and creamy inside.

4. Add salmon & cream

Ten minutes before serving, add the salmon cubes and heavy cream. Let them cook gently for 3–5 minutes — just enough for the salmon to stay tender. Turn off the heat, cover the pot, and let it rest for another 5 minutes.

5. Finish & serve

Stir in fresh dill, add a little extra pepper, and serve with a slice of lemon. Warm, soothing, and perfect for winter evenings. Time
